The Sweet Potato is not a Yam. They hail from South America. There are Louisiana Yams but they are not Sweet Potatoes which adds confusion to the matter. Further they aren't even really a potato.
To me, Sweet Potato means comforting, soothing, slightly sweet soul food. They are pretty in colour as shown but also come in a variety of other colours (white, purple, yellow).
When attempting to lose weight they can be wonderful friends. A base ingredient steamed or baked. Top with your favourite salsa or balsamic vinegar and lay out beside some bright green vegetables.
This recipe stole my heart as Whole Food Plant-Based eating is really about simple ingredients. There are two in this recipe which may be a low record.
Make them as a wrap for your sandwich fillings, a base for plant based tacos, or as a holder for leftover vegetable stews and curries. (Chickpea Masala would be divine)
The recipe is simple. An Iron Skillet is my preferred method however a non-stick pan or those so fortunate to have a griddle press or tortilla maker. The key is to use HOT Sweet Potato (as in don't chill it) and NO OIL>
For weight loss or disease prevention, no oil is used when cooking or preparing a Whole food Plant Based diet which is high in vegetable carbohydrates and starches. Oil ruins the mix as far as healthy goals and optimal weight loss.
Eat as many as you desire. They have a slight sweet doughy texture. Being lazy and hungry I simply plunked in the remaining steamed sweet potato and found it to be simply delicious. Add steamed kale to be more wonderful.
SWEET POTATO TORTILLAS:
2 Cups Steamed Sweet Potato (two large, use remaining in filling)
