There are so many recipes to sift through when creating Plant-Based Meals.
One of the easiest solutions to dinner is to create a one pot meal . We eat whole grain pasta at least once a week. People are often puzzled at the idea we can eat pasta?
"Doesn't pasta contain eggs?"
Fresh pasta is made with eggs, yet the bulk of dried pasta is created without any animal products. A whole grain pasta is most desirable, spelt, farro or whole wheat pastas work well and we prefer their texture as to their white pasta relations.
This recipe uses a format which can be copied easily into other variations of vegetables and pasta. The vegetables are sauteed in water. The trick is to add bits of water at a time, basically covering the pan minimally, allowing the vegetables to cook in a way much as they do when fried in oil, minus the calories.
The flavour profile of the vegetables stays intact.
Smaller tomatoes, like grape or cherry, will break down and create their own liquid sauce, making it a simple toss with cooked pasta and seasonings to create a meal.
1 SPANISH ONION (DICED)
1 CLOVE GARLIC (PEELED AND SLIVERED)
2 PINTS CHERRY OR GRAPE TOMATOES (WASHED)
2 COLOURED PEPPERS (WASHED AND SLICED INTO STRIPS)
2 CUPS GREEN BEANS OR SNOW PEAS (WASHED, TRIMMED AND HALVED)
WATER FOR SAUTEE
4 CUPS COOKED WHOLE GRAIN PASTA (WHOLE WHEAT, SPELT, FARRO)
1 TBSP FAVOURITE ITALIAN SEASONING
PINCH RED CHILLI PEPPERS
SALT & CRACKED PEPPER TO TASTE
***NOTE: ADD WATER IN SMALL AMOUNTS, JUST ENOUGH TO KEEP VEGETABLES FROM STICKING TO PAN. TOO MUCH BOILS THE VEGETABLES.
1) IN A LARGE VEGETABLE SAUTEE PAN OVER MEDIUM-HIGH HEAT, ADD THE ONIONS FIRST WITH A FEW TBSP WATER. SAUTEE FOR A FEW MINUTES UNTIL THE ONIONS BEGIN TO APPEAR TRANSLUCENT/CLEAR.
2) ADD SLIVERED GARLIC TO ONION, STIR.
3) ADD THE CHERRY TOMATOES, PEPPERS, GREEN BEANS, AND SEASONINGS.
4) SAUTEE FOR A FEW MINUTES UNTIL THE TOMATOES BEGIN TO BREAK DOWN.
5) TOSS WITH COOKED PASTA (WE LIKE PENNE)
***NOTE: WE LIKE TO ADD NUTRITIONAL YEAST (VEGAN CHEEZE FLAKES) TO OUR PASTA AS YOU WOULD A PARMESAN CHEESE.
