People have been bugging me to post this recipe, any of my friends who have eaten (even non-plant based). Must have issues with control, or would have posted sooner.
Or perhaps, it's that a photo of Cashew Caesar Salad never does it justice?
It simply doesn't photograph as scrumptious as it tastes.
This dressing has a nice smooth creamy texture, savory from the garlic, a hint of zing from the lemon and vinegar, some baby heat from the dijon and the sweetness from a tsp of maple syrup, it balances all nicely.
We serve tossed with fresh Romaine Lettuce bits and herbed baked whole grain croutons as a meal or as a side to our previously posted Vegetable Lasagna for company.
