Working today on quick recipes for those who do not have time to be in the kitchen but crave delicious Plant Foods. This is a quick fix for dinner and the leftovers are great for lunch. We enjoy cold as well.
A great meal is made by tossing organic arugula with balsamic vinegar (or lemon juice), salt and pepper and serving atop the pizza. It's one of my favourite, I'm alone tonight meals.

There is a we, as we know ourselves to be, both individually and as a collective we, that we all participate in regardless of our individual beliefs or actions. There is no separation.
Many people who begin consumption an entirely plant-based diet, even if completely detached to the animal issues, relate a similar experience or a similar revelation after a period. They remember (a block is removed) the knowledge that animals are sentient, they are loving, they experience life in community and in family much as humans do. Their lives have value. They feel compassion for animals.

This is a lasagna that takes some work AND also time. It's worth the effort though as it has legs, is heavy and hearty enough to feed a crowd or enjoy as leftovers. We LOVE this served with our "Creamy Cashew Caesar Salad" (that I'll post in the next day or so) because it satisfies even those non-plant-based guests.
It was so heavy getting in and out of the oven we weighed IT FOR FUN, and then subtracted the pan weight after consumed to the grand tally of 15 Lb's of vegetable goodness. We do love a chunky lasagna with pieces of carrot, whole red kidney beans and mushrooms.
The melty cheesy spinach centre is accomplished with "Tofutti" a vegan cream cheese we use sparingly but it absolutely makes this dish seem authentic.
2 LARGE (28 OZ) TINS CRUSHED TOMATOES
1 SMALL (6 OZ) TIN TOMATO PASTE
2 CLOVES CRUSHED GARLIC
1 MEDIUM WHITE ONION (PEELED AND ROUGHLY CHOPPED)
1/2 CUP WATER
2 TBSP 100% MAPLE SYRUP
1/2 CUP FRESH BASIL (WASHED, STEMS REMOVED) OR 2 TSP DRIED BASIL
