Have posted these waffles a few time before and people have written so many times asking if they could be made gluten free. These are gluten free (brown rice flour), oil-free and organic. The prep time has also been DRASTICALLY reduced as we eat them everyday for breakfast with varying spices and vegetables.
The cooking time remains 12 minutes per waffle. Thus, we make a batch of six large waffles that lasts three days. They also travel well as my pilot husband can attest to.
This version uses organic corn, green onions, diced hot peppers and an asian spice mix.
Often I will use a scoop of leftover hummus in the mix to add flavor. You could add a large spoonful of any (moist) sauce (0% fat). We make an amazing pesto which is great in a combo with peas and kale.
